Why drink water?  Approximately 60% of our body is composed of water.  Without the proper amount of water our body functions can not perform to their capacity.  Have you experienced thirst?  By the time this sensation sets in the body is already dehydrated to some degree.  Water is the most overlooked ingredient to a healthy body and healthy mind.

Monday
Grilled Chicken Spinach Salad 

Marinate Chicken Breast in:
 1/4 cup Lemon Juice,  teaspoon Minced Garlic or 2 cloves fresh garlic and 1/4 cupCoconut Oil.
Add 2 boiled eggs, spinach and dressing.
Dressing (1 tbsp white balsamic vinegar, 2 tbsp olive oil,
1 teaspoon honey and a pinch of sea salt)


Tuesday
Grilled Chicken Jalapeno Kabobs
and Grilled Peach & Goat Cheese Salad


Salad
Toss the following with dressing:


 8 cups mixed salad greens, washed and ready to use
2 yellow peaches, slightly firm
1/4 cup toasted hazelnuts, almonds or pecans (roughly chopped)
2 ounces goat cheese (fresh if available)


Dressing (1 tbsp white balsamic vinegar, 2 tbsp olive oil,

 1 teaspoon honey and a pinch of sea salt)

2lbs Chicken Tenders
3 limes 

2 jalapenos 

1/4 to 1/2 cup lime juice (or lemon)

¼ teaspoon garlic powder
1 teaspoon sea salt 
White pepper to taste 
¼ cup canola or vegetable oil 
1 bunch fresh cilantro 




Wednesday
Flank, Skirt or Flat Iron Steak

Grill to taste.
Season with Garlic, Pepper, Red Pepper Flakes and a pinch of sea salt
Chimichurri otional.

Serve with grilled or steamed veggies and a sweet potato!

Thursday
Garlic Cilantro Salmon & Black Rice

  • 2 tablespoons oil
  • 1 lime, juice and zest
  • 2 tablespoons cilantro, coarsely chopped
  • 1/2 jalapeno, coarsely chopped (optional)
  • 1 clove garlic, coarsely chopped
  • salt and pepper to taste
  • 2 pound salmon fillet
  • Puree the oil, lime, juice and zest, cilantro, jalapeno and garlic in a food processor until smooth.Place the salmon on foil on a baking sheet, pat dry, season with salt and pepper, spread on the cilantro and lime mixture and bake in a preheated 400F oven (or grill) until just cooked.
    Add Black Rice and Veggies!

      ~Life & Times~

    This has been two slow years in the making. 
     Born into an athletic family, I was constantly surrounded by athletic events and activities.  It's no big surprise that athletics has shaped my life.  One of my favorite quotes comes from the movie In Pursuit of Happiness says, "Don't ever let someone tell you, you can't do something.  You got a dream?  You gotta protect it. 
     People can't do something themselves, they want to tell you, you can't do it. 
     You want something? 
    Go Get It!
    ...PERIOD".



    ~My Handsome Loves~


    Yes I conned them into wearing MY jerseys! 
     Neither of them are Vikings Fans :(
    Sad but true.
    My eldest loves the Green Bay Packers
    and
    my youngest loves the New York Giants to the core!

    These two are the best boys a mom could ever ask for. 
    They are encouraging, honest and lively!
    They are completely different in personality
    but
    they both have Hearts of Gold.

    ~My Parents~

    Growing up my parents set great examples of health, fitness and discipline.  With that they were also very fun.  I can remember laughing and dancing around all the time. 
     On my 7th birthday my Mom put on the best Carnival Party ever!  I loved it. 




     I used to ride my bike alongside my Dad as he ran for miles.  Both my parents competed in road races.  I can remember cheering for a St. Patrick's Day Run. 
    Those are some of my best childhood memories. 
    Their guidance, support and discipline set the tone for my
    junior high and high school
    academic and athletic careers.


    As a volleyball player I excelled as an Outside Hitter for the Blue Jays and as a track athlete I ran 100M Hurdles, 4 x 100M Relay, 300M Hurdles, Triple Jump and Long Jump.
    I absolutely loved sports and miss the competition!
    Academics were first and foremost in our household.  A's & B's or we were in deep crappola (ut even B's! Yikes).  Science, Creative Writing and Athletic Strength Training were my favorites.  I majored in Psychology with a minor in Biology and Sociology. 
    I schooled at the University of Missouri for most of college but graduated with a Bachelors Degree in Psychology from Oklahoma State University.

    I have always been driven to help others.  In college I worked at a group home catering to the blind, the deaf, autistic, schizophrenic and bipolar individuals as well as waited tables and provided training.  I've worked for a Health & Wellness Company, worked as a manager for Arbonne International (Love their products!),  worked in Marketing, was a 3rd Grade Teacher, a Certified Personal Trainer for many years and most recently a Police Officer.  All of the jobs were about helping people.  Now I am fortunate enough to go back to what I love- Fitness!  Yep that's right- FITNESS!!!! 

    Discipline has been a driving force throughout every twist and turn in my life and continues to be structure for my future goals and dreams.  I've always held loyalty, compassion and realness in high regard.  This next phase of my journey will be nothing less than PURE BLISS.  After all it's about making a life not caring what others think of your life...
